Vegetarian Mexican Pasta

Preparation: Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes; drain. While pasta is cooking, heat olive oil over medium heat in a large skillet. Cook onion and peppers in oil until lightly browned, 10 minutes. Stir in corn and heat through. Stir in black beans, tomatoes and jalapenos, mild salsa and olives and cook for 5 minutes. Toss sauce with cooked pasta and serve. Muy bien! |
