This plant-based salad adds some tang and spice to your lunch routine. Thai Chili Sauerkraut adds Silver Fleece Sauerkraut, Thai chili, peanuts, and lime juice for a tasty side dish or quick lunch.

Ingredients:

  • 1 (14 oz.) can Silver Fleece Sauerkraut
  • 4 Tbsp. Cilantro, chopped
  • 4 tsp. Lime Juice
  • 4 tsp. Rice Wine Vinegar
  • 2 tsp. Thai Chili, minced with seeds
  • 2 tsp. Ginger Puree
  • 1/2 Cup Peanuts, roasted and smashed
  • 1/4 tsp. Sea Salt

Instructions:

  • Combine all ingredients together.  Let stand 10 minutes.  Serve.

Chef's Tip:

Substitute serrano pepper or roasted smashed cashews.
