Aunt Mary's Cabbage Soup
Ingredients:
- 1 (28 oz.) can Dei Fratelli Seasoned Diced Tomatoes, drained
- 3/4 Cup Dei Fratelli Tomato Juice
- 3 Tbsp. Vegetable Oil
- 1 lb. Smoked Kielbasa, sliced
- 1 Cup White Onion, diced
- 1 tsp. Garlic, minced
- 2 tsp. Dijon Mustard
- 4 Cups Potatoes, peeled and diced
- 2 Cups Carrots, peeled and diced
- 1 Cup Green Bell Pepper, diced
- 4 Cups Cabbage, shredded
- 6 Cups Water
- 1 tsp. Salt
- 1/4 tsp. Black Pepper
Instructions:
- In a large stockpot, heat oil over medium heat. Add kielbasa and cook until browned, about 5 minutes. Add onion and garlic and continue cooking another 3-5 minutes, or until onion is tender.
- Add potatoes, carrots, and green pepper. Continue cooking until veggies become tender, about 8-10 minutes, stirring occasionally.
- Add Dei Fratelli Seasoned Diced Tomatoes, Dei Fratelli Tomato Juice, and remaining ingredients. Bring to a boil. Reduce heat, cover, and simmer for an additional 15 minutes.
