  1. Preheat oven to 350 F.
  2. In a large bowl, combine Dei Fratelli Low Sodium Diced Tomatoes, carrots, and canola oil. Place on a metal baking sheet and cook for 25 minutes, or until soft.
  3. Spray a large saute pan with oil and cook celery over medium heat for 2 minutes. Add cooked farro, tomatoes, and carrots and continue cooking another 3 minutes.
  4. Add vegetable stock and continue cooking until stock is dissolved and farro holds together, about 8-10 minutes.

Recipe Notes

Salt and pepper to taste. Serve over arugula and garnish with dairy-free feta cheese.
