  1. Preheat oven to 350 F.
  2. Roast squash for 45 minutes, or until tender. Set aside to cool.
  3. In a large sauce pot, saute onion, celery, and carrot over medium heat for 5 minutes. Add remaining ingredients and combine well. Reduce heat and simmer for another 5 minutes.
  4. Once squash is cooled, scoop out and add to soup mixture. Continue simmering for an additional 10 minutes.
  5. Using a hand mixer or immersion blender, blend ingredients together until smooth.
