In a small bowl, whisk together eggs and water. Place breadcrumbs in a separate bowl. Dip each eggplant slice into egg mixture, then in breadcrumbs until fully coated. Set aside.
Heat 2-3 tablespoons of oil in a large saucepan over medium-high heat. Place a single layer of eggplant in the pan and lightly fry, about 3-5 minutes on each side. Add more olive oil and repeat as needed.
Cover the bottom of a large baking dish with 1/2 cup of Dei Fratelli Pizza Sauce. Arrange eggplant in a single layer over sauce. Top with remaining sauce, followed by mozzarella slices and parmesan. Bake for 20-25 minutes, or until cheese is melted and golden brown.
Serve with your favorite pasta! Dei Fratelli Pizza Sauce can be substituted with any of the Dei Fratelli Pasta Sauces.
