  1. Preheat oven to 400 F.
  2. Remove the stems from cauliflowers and cut into chunks. Place in a food processor and pulse until it resembles the texture of rice.
  3. Place in a microwave-safe bowl and microwave for 5 minutes on high. Allow cauliflower to completely cool, then place it in a cheese cloth or towel. Squeeze as much liquid as possible out of the cauliflower.
  4. Place in a medium-sized bowl and combine with eggs, goat cheese, parmesan, garlic, oregano, basil, and salt. Mix well.
  5. Line 2 baking pans with parchment paper. Split the cauliflower crust in half and place each half on a baking pan. Spread the mixture evenly over each pan, forming the crust for both pizzas.
  6. Place in the oven and pre-bake both crusts for 20 minutes, or until crusts are a golden brown.
  7. Remove from oven and spread 3/4 cup of Dei Fratelli Pizza Sauce on each crust, leaving 1/2″ all around the edges. Top each pizza with 3/4 cup of mozzarella and 1/4 cup of cheddar cheese. Return to oven and bake for an additional 15 minutes, or until cheese is completely melted.
