Season roast generously with salt and pepper on all sides. Heat oil over medium-high heat in a Dutch Oven. Carefully sear roast on all sides until browned, about 1 minute per side. Set aside.
Add carrots, celery, and onion to Dutch Oven and saute until onions are translucent, about 3-4 minutes. Remove pan from heat, add potatoes, and combine well. Return roast back to pan on top of vegetables.
Pour Dei Fratelli Fire Roasted Crushed Tomatoes over all ingredients. Add water, cover, and cook in oven for 1 1/2 - 2 1/2 hours, or until roast reaches desired tenderness and can be easily shredded.
