Fire Roasted Pot Roast

Fire Roasted Pot Roast is the perfect one-pot dinner with a twist. Dei Fratelli Fire Roasted Crushed Tomatoes add some smoky flavor to traditional chuck roast, carrots, potatoes, and onions to create a dish the whole family can enjoy, and with less dishes too!

Ingredients:
- 1 (28 oz.) can Dei Fratelli Fire Roasted Crushed Tomatoes
- 2 lbs. Chuck Roast
- Salt , as needed
- Black Pepper , as needed
- 2 Tbsp. Vegetable Oil
- 2 Cups Carrot, roughly chopped
- 2 Cups Celery, roughly chopped
- 2 Cups White Onion, diced
- 3 Cups Red Potatoes, diced
- 3 1/2 Cups Water
Instructions:
- Preheat oven to 350 F.
- Season roast generously with salt and pepper on all sides. Heat oil over medium-high heat in a Dutch oven. Carefully sear roast on all sides until browned, about 1 minute per side. Set aside.
- Add carrots, celery, and onion to Dutch oven and sauté until onions are translucent, about 3-4 minutes. Remove pan from heat, add potatoes, and combine well. Return roast back to pan on top of vegetables.
- Pour Dei Fratelli Fire Roasted Crushed Tomatoes over all ingredients. Add water, cover, and cook in oven for 1 1/2 – 2 1/2 hours, or until roast reaches desired tenderness and can easily be shredded.
Chef's Tip:
Plan ahead! Throw all ingredients in your slow cooker and cook throughout the day.
If you do not have a Dutch oven, use a stockpot or soup pot instead!
