The perfect breakfast for a spicy morning! Our Huevos Rancheros combines Dei Fratelli Our Original Salsa Mild with chipotle chili powder, onions, and cilantro to top a tortilla and some sunny side up eggs!

Ingredients:

  • 1 (16 oz.) jar Dei Fratelli Our Original Salsa Mild
  • 6 Tbsp. Extra Virgin Olive Oil, divided
  • 1/2 Cup White Onion, diced
  • 1 (4 oz.) can Green Chilies, diced
  • 1/2 tsp. Chipotle Chili Powder
  • 8 Corn Tortillas
  • 2 Tbsp. Butter
  • 8 Eggs
  • Cilantro, for garnish

Instructions:

  • In a large skillet, heat 1 Tbsp. olive oil over medium heat. Cook onions until translucent, about 5 minutes.
  • Add Dei Fratelli Our Original Salsa Mild, green chilies, and chili powder. Reduce heat and simmer for 10 minutes, stirring occasionally.
  • While tomatoes are simmering, heat another pan with 1 Tbsp. olive oil over medium heat. Add tortillas and cook for 1-2 minutes on each side. Repeat until all tortillas are warm and set aside.
  • Once tortillas are warm, melt 1/2 Tbsp. of butter in the pan over medium heat. Crack 2 eggs and cook for 3-4 minutes for runny yolks or longer for firmer eggs. Repeat with remaining butter and eggs.
  • To serve, spoon sauce into 4 plates. Top each with 2 tortillas, 2 eggs, and more sauce. Garnish with fresh cilantro.

Chef's Tip:

Try this recipe with Dei Fratelli Our Original Salsa Medium for a spicier alternative.  Top with your favorite sliced peppers, cheese, and other toppings!
