Cook lasagna noodles according to package instructions until al dente. Drain and set aside to fully cool.
In a medium bowl, mix ricotta cheese, egg, 1/2 cup mozzarella, parmesan, spinach, and salt until well combined.
In a 9×13 baking dish, ladle 1 cup Dei Fratelli Italian Sauce. Spread evenly among the bottom of the pan.
Assemble your roll-ups by spreading roughly 3 Tbsp. of the ricotta mixture on each lasagna noodle. Spread roughy 2 Tbsp. of Dei Fratelli Italian Sauce evenly on top of the cheese. Carefully roll up each noodle and place them seam side down in the baking dish.
Top the roll-ups with the remaining Dei Fratelli Italian Sauce, then sprinkle remaining mozzarella evenly over the entire dish.
Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 20 minutes, or until cheese is fully melted.
