Ingredients:
- 1 (14.5 oz.) can Dei Fratelli Stewed Tomatoes, drained and chopped
- 2 Cups Carrot, sliced in coins
- 1 Cup Red Onion, diced
- 1 Cup Celery, diced
- 1 Cup Black Olives, drained and chopped
- 1 Cup Green Olives, drained and chopped
- 16 oz. Mozzarella Cheese, cubed
- 1/2 Cup Extra Virgin Olive Oil
- 1/4 Cup Red Wine Vinegar
- 2 tsp. Garlic, minced
- 1/2 tsp. Salt
- 1/4 tsp. Black Pepper
Instructions:
- In a large bowl, toss together Dei Fratelli Stewed Tomatoes, carrot, onion, celery, olives, and mozzarella. Combine well and set aside.
- In a small bowl, whisk together olive oil, vinegar, garlic, salt, and pepper. Pour over tomato mixture and gently stir.
Chef's Tip:
For best results, let marinate overnight. Serve as is, with crackers, or with toasted bread.
