Mexi-Corn Muffins

Perfect for chili night or a summer barbecue our Mexi-Corn Muffins add spice and flavor to your cornbread mix. Just add Dei Fratelli Chopped Mexican Tomatoes for a little kick and a whole lot of flavor with little effort required.

Ingredients:
- 1 (14.5 oz.) can Dei Fratelli Chopped Mexican Tomatoes, drained, rinsed, and minced
- 1 (15 oz.) box Honey Cornbread Mix
Instructions:
- Preheat oven to 375 F.
- Mix cornbread according to package instructions.
- Blot minced Dei Fratelli Chopped Mexican Tomatoes with paper towel to remove as much moisture as possible. Fold into cornbread mix.
- Add mix to a greased muffin pan. Bake for 15-20 minutes, or until golden brown.
