Using our Mexicali Dip recipe, our Mexicali Chicken Burrito repurposes this dip as a spread for a burrito or wrap.  Made with Dei Fratelli Chopped Mexican Tomatoes, chicken breasts, brown rice, and Mexican cheese blend this recipe is great for a weekend lunch or a healthy and hearty grab-and-go dinner.

Ingredients:

FOR MEXICALI DIP:

  • 1 (14.5 oz.) can Dei Fratelli Chopped Mexican Tomatoes, well drained
  • 1 (16 oz.) can Refried Beans
  • 1 (8 oz.) block Light Cream Cheese, softened
  • 1 Cup Mexican Cheese Blend, shredded
  • 1/2 Cup Light Sour Cream
  • 2 Tbsp. Taco Seasoning

FOR MEXICALI CHICKEN BURRITO:

  • 1/2 Cup Mexicali Dip
  • 4 large Tortillas or Wraps
  • 2 Cups Brown Rice
  • 2 Chicken Breasts, cooked and cut into strips
  • 1/2 Cup Mexican Cheese Blend, shredded
  • 1/2 Cup Lettuce, shredded

Instructions:

  • For the Mexicali Dip use a hand mixer, combine all ingredients on medium-low speed until well incorporated.
  • Fill each tortilla with 1/2 cup rice, 1/4 of the chicken, 2 Tbsp. cheese, and 2 Tbsp. of lettuce.  Drizzle each with 2 Tbsp. of Mexicali Dip.  Roll to create a burrito.

Chef's Tip:

Can also be grilled after rolling!  Serve with a side of tortilla chips and more Mexicali Dip.
