  1. In a large pan, cook sausage over medium heat until browned, about 8 minutes. Remove sausage and drain grease, leaving about 1 tablespoon in the pan.
  2. Add onion and garlic and saute for 3 minutes. Add red wine and continue cooking for 2 minutes, or until pan is mostly dry.
  3. Stir in beef broth, Dei Fratelli Crushed Tomatoes with Basil & Herbs, Dei Fratelli Tomato Sauce, beans, oregano, and cooked sausage. Bring to a boil.
  4. Reduce heat and simmer uncovered for 30 minutes, stirring occasionally. Skim fat from the soup, cover, and simmer for an additional 20 minutes.
  5. Add tortellini and continue to simmer for another 10 minutes. Fold in spinach and allow to wilt, about 2 minutes. Garnish with basil and parmesan cheese.
