Add some flair to your 4th of July celebrations with Patriotic Picnic Potatoes! Red Dei Fratelli Chopped Italian Tomatoes, blue cheese, and bacon create a colorful side to share at your family festivities.

Ingredients:

  • 1 (28 oz.) can Dei Fratelli Chopped Italian Tomatoes, drained
  • 4 Slices Bacon
  • 2 lbs. Red Potatoes
  • 1 Bunch Chives, sliced
  • 3 Tbsp. White Vinegar
  • 2 Tbsp. Vegetable Oil
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 1/2 Cup Blue Cheese, crumbled

Instructions:

  • In a large skillet, cook bacon over medium-high heat until crispy, about 10 minutes.  Drain grease, crumble, and set aside.
  • While bacon is cooking, bring a pot of water to a boil.  Add potatoes and cook until tender, about 15-20 minutes.  Drain, cool, and dice into bite-sized pieces.
  • In a large bowl, mix together Dei Fratelli Chopped Italian Tomatoes, chives, vinegar, oil, salt, and pepper.  Gently fold in cooked potatoes, crumbled bacon, and blue cheese.

Chef's Tip:

If you do not have blue cheese on hand substitute with feta cheese for a Mediterranean twist.
