  1. In a large skillet, cook bacon over medium-high heat until crispy, about 10 minutes. Drain grease, crumble, and set aside.
  2. While bacon is cooking, bring a pot of water to a boil. Add potatoes and cook until tender, about 15-20 minutes. Drain, cool, and dice into bite-sized pieces.
