Plant-Based Creamy Tomato Soup

Nothing says cozy like a bowl of Plant-Based Creamy Tomato Soup and grilled cheese! This soup is sure to warm you right up with Dei Fratelli Stewed Tomatoes, coconut milk, and basil.

Ingredients:
- 1 (28 oz.) can Dei Fratelli Stewed Tomatoes
- 1 Tbsp. Extra Virgin Olive Oil
- 1/2 Cup Sweet Onion, diced
- 2 tsp. Garlic, minced
- 1 tsp. Dried Basil
- 1/2 tsp. Dried Oregano
- 1/4 tsp. Red Pepper Flakes
- 1/4 tsp. Salt
- 1/2 Cup Unsweetened Light Coconut Milk
Instructions:
- Heat oil in a large saucepan over medium-high heat. Add onions and cook until translucent, about 6 minutes. Add garlic and cook until garlic and onions start to brown, about 2 more minutes.
- Reduce heat and add Dei Fratelli Stewed Tomatoes, basil, oregano, red pepper flakes, and salt. Combine well and simmer for 20 minutes.
- Pour mixture into a blender and puree until smooth, about 1 minute. Return to the saucepan and add coconut milk. Cook over medium-low heat for another 6 minutes.
Chef's Tip:
Garnish with fresh, snipped basil and shredded plant-based parmesan cheese.
