Ingredients
- 1 (28 oz.) can Dei Fratelli Seasoned Diced Tomatoes drained and rinsed
- 1 lb. bag Shredded Potatoes
- 1 Cup Sour Cream
- 1 Cup Colby Cheese shredded
- 1 Cup Jack Cheese shredded
- 1/2 Cup Gouda Cheese shredded
- 1/2 Cup White Onion minced
- 4 Tbsp. Unsalted Butter melted
- 1/4 tsp. Sea Salt
- 1/4 tsp. Black Pepper
- 4 Cups Crinkle Cut Potato Chips
- 1/2 Cup Parmesan Cheese grated
Instructions
- Preheat oven to 375 F.
- Combine all ingredients, except potato chips and parmesan cheese, in a large bowl. Mix well and spread evenly in a greased 9x13 baking dish. Bake for 35 minutes.
- While the casserole is baking, smash the potato chips and parmesan cheese in a resealable bag until well combined and resembles bread crumbs.
- Evenly top the casserole with the chip mixture and bake for an additional 10 minutes.
