In a large sauce pot, combine Dei Fratelli Petite Diced Tomatoes with Onion, Celery & Peppers, processed cheese, sour cream, green chiles, paprika, cumin, and cayenne. Bring heat to medium and heat until melted, about 10-12 minutes, stirring occasionally.
In a plastic bag, combine sharp cheddar and cornstarch. Shake until cheese is well coated with cornstarch. Add to remaining ingredients and continue cooking for an additional 2-3 minutes.
For a little more heat, use Dei Fratelli Chopped Mexican Tomatoes instead! Serve with your favorite tortilla chips.
