  1. Preheat oven to 350° F.
  2. Wash mushrooms and remove stems. Reserve the stems for later.
  3. Place mushroom caps on a greased baking sheet. Spray with olive oil spray and bake for 10 minutes.
  4. Saute the bacon until very crispy and can be crumbled into bits. Set aside.
  5. Mince the mushroom stems. Saute along with onion in bacon drippings until the onions are translucent and the mushrooms are soft. Add bread crumbs and mix together until all the grease is soaked up.
  6. Remove from heat and add Silver Fleece Sauerkraut, swiss cheese, crumbed bacon bits, salt, and black pepper. Combine well.
  7. Stuff each mushroom cap with sauerkraut mixture and brush with the melted butter.
  8. Return mushrooms back to the baking sheet and place under a preheated broiler until browned, about 4-5 minutes.
