  1. In a 4-Quart Slow Cooker, mix together tomatoes, bread crumbs, onion, red pepper, and chicken broth.
  2. Place the chicken tenderloins into the mixture and stir until evenly coated.
  3. Cover and cook on high for 3 hours.
  4. Remove lid and cover mixture evenly with slices of mozzarella. Sprinkle Parmesan cheese on top, re-cover, and cook for an additional 15 minutes.
  5. Serve over pasta, rice or on a slice of toasted Italian bread.
