  1. Preheat oven to 350°F.
  2. Cut zucchini in half lengthwise. Score and scoop out the flesh of the zucchini. Set aside.
  3. In a large skillet, heat oil over medium heat. Add ground beef and insides of zucchini and cook until beef is browned, about 8-10 minutes. Season with salt and pepper.
  4. Place zucchini shells in large baking dish. Fill each shell with meat mixture until gone. Top with Dei Fratelli Gluten-Free Tomato Soup and bake for 30 minutes.
  5. Top with cheese and continue baking for an additional 10 minutes.

Recipe Notes

Try with shredded Pepper Jack Cheese for an extra kick in flavor!
