Instructions

  1. Preheat oven to 325 F.
  2. Add sweet potato and carrots to a baking sheet and roast for 45 minutes. Remove and set aside to cool.
  3. Remove skin from sweet potatoes, chop, and add to a food processor. Add roasted carrot and mix until smooth, about 2 minutes.
  4. Add remaining ingredients and continue mixing an additional 2-3 minutes.

Serve with fresh veggies, pretzels, or pita bread.
