Ingredients:
- 1 (10.75 oz.) can Dei Fratelli Gluten-Free Tomato Soup
- 2 large Sweet Potatoes
- 1 Cup Carrot, roughly chopped
- 1/2 Cup Water
- 2 Tbsp. Extra Virgin Olive Oil
- 2 Tbsp. Balsamic Vinegar
- 2 Tbsp. Roasted Red Pepper
- 2 tsp. Garlic, minced
- 1 tsp. Salt
- 1 tsp. Black Pepper
Instructions:
- Preheat oven to 325 F.
- Add sweet potatoes and carrots to a baking sheet and roast for 45 minutes. Remove and mix until smooth, about 2 minutes.
- Add remaining ingredients and continue mixing an additional 2-3 minutes.
Chef's Tip:
Serve with fresh veggies, pretzels, or pita bread.
