Sweet Potato Pasta Bake

Ingredients:
- 1 (28 oz.) can Dei Fratelli Italian Sauce
- 1 (14.5 oz.) can Dei Fratelli Low Sodium Diced Tomatoes, drained
- 1 Tbsp. Extra Virgin Olive Oil
- 1 Cup Sweet Onion, diced
- 1/2 Cup Red Bell Pepper, seeded and diced
- 1 Tbsp. Garlic, minced
- 1 lb. Ground Turkey
- Black Pepper, to taste
- 1 large Sweet Potato, spiralized into noodles
- 1 (8 oz.) ball Mozzarella Cheese, sliced
Instructions:
- Preheat oven to 350 F.
- In a large cast iron Dutch oven, heat up olive oil over medium-high heat. Add onion and bell pepper and cook for 5 minutes. Add garlic and cook another 2 minutes, stirring occasionally.
- Add turkey and cook thoroughly, about 8 minutes. Drain grease. Add Dei Fratelli Italian Sauce, Dei Fratelli Low Sodium Diced Tomatoes, and black pepper. Combine well, reduce heat, and simmer for 10 minutes.
- Add spiralized sweet potato and mix. Cook over medium heat for 10 minutes, stirring occasionally. Evenly cover the dish with mozzarella slices.
- Cover and place in oven for 20 minutes. Remove lid and bake for an additional 5-10 minutes, or until cheese is completely melted.

Looking to add a little heat to this dish? Try adding some diced jalapeno!
Don't have access to a Dutch oven? Use a stockpot or a large soup pot instead!
