  1. Preheat oven to 375°F.
  2. Place ground beef in a large saute pan. Cook over medium-high heat until browned, about 8-10 minutes. Drain fat.
  3. Add Dei Fratelli Our Original Salsa Medium, Dei Fratelli Stewed Tomatoes, taco seasoning, corn, and black beans. Stir to combine and bring to a boil.
  4. Once bubbling, cover with lid, reduce heat, and simmer for 15 minutes.
  5. Grease a 9x13 baking dish with non-stick spray. Using 4 tortillas, layer the bottom of the dish.
  6. Spread about 2/3 cup of the queso fresco on top of the tortillas, covering as much as possible. Take about 1/3 of the meat sauce and create another layer on top of the queso fresco.
  7. Mix together the monterey jack and sharp cheddar cheeses. Take 2/3 cup of the mixture and sprinkle on top of the meat sauce.
  8. Repeat two more times so you have 3 layers total. Place in the oven and cook for 25 minutes. Allow 10 minutes to cool before slicing.

Recipe Notes

Garnish with shredded cabbage, a dollop of sour cream, chopped cilantro, or more cheese.
