Up your lunch game with our Tomato Broccoli Bowl! This combination of Dei Fratelli Seasoned Diced Tomatoes, wild rice, and chicken is a healthy and filling lunch to meal prep for a busy week ahead.

Ingredients:

  • 1 (28 oz.) can Dei Fratelli Seasoned Diced Tomatoes, drained
  • 4 Cups Broccoli Florets
  • 2 Tbsp. Extra Virgin Olive Oil
  • 1 Tbsp. Garlic, minced
  • 1/8 tsp. Salt
  • 1/8 tsp. Black Pepper
  • 1 Cup Wild Rice Blend, uncooked
  • 1 1/2 Cups Vegetable Stock
  • 2 Chicken Fillets, cooked and chopped

Instructions:

  • Preheat oven to 425 F.
  • In a medium bowl, toss together broccoli, olive oil. garlic, salt, and pepper until well combined. Evenly distribute on a baking sheet and roast for 15 minutes.
  • While broccoli is roasting, bring rice and vegetable stock to a boil in a medium saucepan. Cover and simmer according to package instructions, about 10 minutes.
  • Once broccoli is finished roasting, add it to a second saucepan with Dei Fratelli Seasoned Diced Tomatoes and cooked chicken. Combine well and heat over medium heat for 5 minutes. Serve over rice.

Chef's Tip:

Garnish with shredded parmesan cheese.
