Dei Fratelli Seasoned Diced Tomatoes, tri-colored pasta, salami, and cucumbers combine with mozzarella cheese to create this Tomato Caesar Pasta Salad.  This family-favorite side is the perfect addition to your barbecue or picnic this summer!

Ingredients:

For Tomato Caesar Dressing:

  • 1 (28 oz.) can Dei Fratelli Crushed Tomatoes
  • 2 1/3 Cups Extra Virgin Olive Oil
  • 1/4 Cup + 2 tsp. Garlic, minced
  • 1/4 Cup + 2 tsp. Worcestershire Sauce
  • 1/4 Cup + 2 tsp. Lemon Juice
  • 1/4 Cup + 1 Tbsp. Egg Whites, pasteurized
  • 7/8 Cup Water
  • 7/8 Cup Parmesan Cheese, grated
  • 1 3/4 tsp. Red Wine Vinegar
  • 1 3/4 tsp. Sea Salt
  • 1 3/4 tsp. Black Pepper

For Tomato Caesar Pasta Salad:

  • 1 (28 oz.) can Dei Fratelli Seasoned Diced Tomatoes, drained
  • 2 lbs. Tri-Colored Pasta Assortment, cooked al dente
  • 16 oz. Salami, diced
  • 16 oz. Mozzarella Cheese, cubed
  • 2 large Cucumbers, peeled and diced
  • 2 Vidalia Onions, finely chopped
  • 1 Tbsp. Flat Leaf Parsley, chopped
  • 4 Cups Tomato Caesar Dressing

Instructions:

  • For the Tomato Caesar Dressing, in a medium saucepan, combine Dei Fratelli Crushed Tomatoes and olive oil over medium heat.  Whisk mixture until it comes together and bubbles at a steady simmer, about 4-5 minutes. Remove from heat and set aside to come to room temperature.
  • Combine garlic, Worcestershire sauce, lemon juice, water, parmesan cheese, egg whites, red wine vinegar, sea salt, and black pepper in a food processor.  Mix until egg whites cause mixture to become frothy.
  • While still mixing, slowly incorporate tomato mixture into food processor, a few drops at a time. Continue mixing until a creamy dressing is formed.
  • For Tomato Caesar Pasta Salad mix all ingredients in a large bowl.  Allow to chill for maximum flavor.

Chef's Tip:

Remove salami for a tasty vegetarian option!
