Tomato Caesar Pasta Salad

Ingredients:
For Tomato Caesar Dressing:
- 1 (28 oz.) can Dei Fratelli Crushed Tomatoes
- 2 1/3 Cups Extra Virgin Olive Oil
- 1/4 Cup + 2 tsp. Garlic, minced
- 1/4 Cup + 2 tsp. Worcestershire Sauce
- 1/4 Cup + 2 tsp. Lemon Juice
- 1/4 Cup + 1 Tbsp. Egg Whites, pasteurized
- 7/8 Cup Water
- 7/8 Cup Parmesan Cheese, grated
- 1 3/4 tsp. Red Wine Vinegar
- 1 3/4 tsp. Sea Salt
- 1 3/4 tsp. Black Pepper
For Tomato Caesar Pasta Salad:
- 1 (28 oz.) can Dei Fratelli Seasoned Diced Tomatoes, drained
- 2 lbs. Tri-Colored Pasta Assortment, cooked al dente
- 16 oz. Salami, diced
- 16 oz. Mozzarella Cheese, cubed
- 2 large Cucumbers, peeled and diced
- 2 Vidalia Onions, finely chopped
- 1 Tbsp. Flat Leaf Parsley, chopped
- 4 Cups Tomato Caesar Dressing
Instructions:
- For the Tomato Caesar Dressing, in a medium saucepan, combine Dei Fratelli Crushed Tomatoes and olive oil over medium heat. Whisk mixture until it comes together and bubbles at a steady simmer, about 4-5 minutes. Remove from heat and set aside to come to room temperature.
- Combine garlic, Worcestershire sauce, lemon juice, water, parmesan cheese, egg whites, red wine vinegar, sea salt, and black pepper in a food processor. Mix until egg whites cause mixture to become frothy.
- While still mixing, slowly incorporate tomato mixture into food processor, a few drops at a time. Continue mixing until a creamy dressing is formed.
- For Tomato Caesar Pasta Salad mix all ingredients in a large bowl. Allow to chill for maximum flavor.
Chef's Tip:
Remove salami for a tasty vegetarian option!
