  1. Preheat oven to 350 F.
  2. In a small bowl, pour hot water over raisins and allow to soak for 10 min.
  3. In a large bowl, add Dei Fratelli Petite Diced Tomatoes. Gradually add baking soda, applesauce, flour, sugars, baking powder, butter, eggs, vanilla, cinnamon, cloves, and salt. Combine mixture well after each addition.
  4. Drain raisins. Fold raisins and pecans into batter. Pour equally into 2 loaf pans and bake for 45 minutes. Remove from oven and let cool.
  5. While cake is cooling, whisk together powdered sugar and orange juice to make glaze. If needed, add more powdered sugar to make thicker. Pour glaze over cake.

Recipe Notes

If you don't have loaf pans, you can bake in 2 9" cake pans instead and reduce cooking time to 20 minutes. For a sweeter glaze, add orange zest!
