A delicious cake with all the best ingredients! Dei Fratelli Petite Diced Tomatoes, raisins, applesauce, and pecans make Tomato Cake a flavorful dessert. Glazed with orange juice and powdered sugar make for a treat filled with summer flavors!

Ingredients:

  • 1 (14.5 oz.) can Dei Fratelli Petite Diced Tomatoes, drained and rinsed
  • 1/2 Cup Raisins
  • 1/2 Cup Hot Water
  • 1/2 tsp. Baking Soda
  • 1/2 Cup Applesauce
  • 2 1/2 Cups Flour
  • 1/2 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 2 tsp. Baking Powder
  • 1/2 Cup Butter, unsalted, softened
  • 2 Eggs
  • 1 tsp. Vanilla Extract
  • 1 tsp. Cinnamon
  • 1/4 tsp. Clove
  • 1/2 tsp. Salt
  • 1 Cup Pecans
  • 1/2 Cup Powdered Sugar
  • 2 Tbsp. Orange Juice

Instructions:

  • Preheat oven to 350 F.
  • In a small bowl, pour hot water over raisins and allow to soak for 10 minutes.
  •  In a large bowl, add Dei Fratelli Petite Diced Tomatoes. Gradually add baking soda, applesauce, flour, sugars, baking powder, butter, eggs, vanilla, cinnamon, cloves, and salt. Combine mixture well after each addition.
  • Drain raisins and fold raisins and pecans into batter. Pour equally into 2 loaf pans and bake for 45 minutes. Remove from oven and let cool.
  • While the cake is cooling, whisk together powdered sugar and orange juice to make glaze If needed, add more powdered sugar to make it thicker. Pour glaze over cake.

Chef's Tip:

If you don’t have loaf pans, you can bake in 2 9" cake pans instead and reduce cooking time to 20 minutes.  For a sweeter glaze, add orange zest.
