One-pot Tomato Lentil Soup is a healthy plant-based and flavorful soup made for the whole family. Dei Fratelli Gluten-Free Tomato Soup is mixed with red lentils, red pepper, and onion to create this veggie packed tomato soup that is worth grabbing a second bowl.

Ingredients:

  • 1 (10.75 oz.) can Dei Fratelli Gluten- Free Tomato Soup
  • 1/2 Cup Red Onion, diced
  • 1/2 Cup Red Bell Pepper, diced
  • 1/4 Cup Celery, diced
  • 2/3 Cup Red Lentils
  • 1 tsp. Garlic, minced
  • 3 Cups Low Sodium Vegetable Stock
  • 1 Bay Leaf
  • 1/2 tsp. Granulated Onion
  • 1/2 tsp. Coriander
  • 1/4 tsp. Thyme
  • 1/4 tsp. Black Pepper
  • 1/8 tsp. Cayenne Pepper
  • 1 Tbsp Lemon Juice

Instructions:

  • In a large saucepan, cook red onion, red pepper, and celery over medium-high heat until tender, about 3 minutes. Add red lentils and garlic and cook for another 2 minutes.
  • Add Dei Fratelli Gluten-Free Tomato Soup, vegetable stock, and a bay leaf. Reduce heat, cover, and simmer for 15 minutes.
  • Remove lid. Add spices, combine well, and continue cooking an additional 5 minutes, or until lentils are tender. Add lemon juice and mix.

Chef's Tip:

Garnish with a drizzle of olive oil and additional diced red onion.
