Ingredients:
- 1 (10.75 oz.) can Dei Fratelli Gluten- Free Tomato Soup
- 1/2 Cup Red Onion, diced
- 1/2 Cup Red Bell Pepper, diced
- 1/4 Cup Celery, diced
- 2/3 Cup Red Lentils
- 1 tsp. Garlic, minced
- 3 Cups Low Sodium Vegetable Stock
- 1 Bay Leaf
- 1/2 tsp. Granulated Onion
- 1/2 tsp. Coriander
- 1/4 tsp. Thyme
- 1/4 tsp. Black Pepper
- 1/8 tsp. Cayenne Pepper
- 1 Tbsp Lemon Juice
Instructions:
- In a large saucepan, cook red onion, red pepper, and celery over medium-high heat until tender, about 3 minutes. Add red lentils and garlic and cook for another 2 minutes.
- Add Dei Fratelli Gluten-Free Tomato Soup, vegetable stock, and a bay leaf. Reduce heat, cover, and simmer for 15 minutes.
- Remove lid. Add spices, combine well, and continue cooking an additional 5 minutes, or until lentils are tender. Add lemon juice and mix.
Chef's Tip:
Garnish with a drizzle of olive oil and additional diced red onion.
