  1. In a large sauce pot, cook red onion, red pepper, and celery over medium-high heat until tender, about 3 minutes. Add red lentils and garlic and cook another 2 minutes.
  2. Add Dei Fratelli Gluten-Free Tomato Soup, vegetable stock, and bay leaf. Reduce heat, cover, and simmer for 15 minutes.
  3. Remove lid. Add spices, combine well, and continue cooking an additional 5 minutes, or until lentils are tender. Add lemon juice and mix.

Recipe Notes

Garnish with a drizzle of olive oil and additional diced red onion.
