Spray a baking sheet with oil. Pat tomatoes with paper towel to remove any excess moisture, as much as possible. Place tomatoes evenly throughout the tray to ensure even baking. Bake tomatoes for 40 minutes.
Remove from oven and allow to cool completely. Store in the fridge.
