Ingredients:

  • 1 (14.5 oz.) can Dei Fratelli Chopped Italian Tomatoes
  • 2 lbs. Chicken Thighs, cubed
  • 1/4 Cup Carrot, peeled and cut into half-moon shapes
  • 1/4 Cup Onion, thinly sliced
  • 1 Tbsp. Garlic, minced
  • 3/4 tsp. Fresh Rosemary, chopped
  • 3 tsp. Lemon Juice, fresh
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper

Instructions:

  •  Add all ingredients to a 3-quart slow cooker.  Lightly stir for an even distribution.  Cook on high for 3 hours.

Chef's Tip:

Serve over your choice of rice or pasta! Have a larger slow cooker?  Double this recipe to have leftovers for later in the week, or freeze and thaw for meals later.
