Ingredients:
- 1 (14.5 oz.) can Dei Fratelli Chopped Italian Tomatoes
- 2 lbs. Chicken Thighs, cubed
- 1/4 Cup Carrot, peeled and cut into half-moon shapes
- 1/4 Cup Onion, thinly sliced
- 1 Tbsp. Garlic, minced
- 3/4 tsp. Fresh Rosemary, chopped
- 3 tsp. Lemon Juice, fresh
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper
Instructions:
- Add all ingredients to a 3-quart slow cooker. Lightly stir for an even distribution. Cook on high for 3 hours.

Serve over your choice of rice or pasta! Have a larger slow cooker? Double this recipe to have leftovers for later in the week, or freeze and thaw for meals later.
