Instructions

  1. Bring a large pot of water to a boil. Add noodles and cook according to package instructions until al dente. Drain and set aside.
  2. While noodles are cooking, heat oil over medium heat in a large skillet. Add mushrooms and onion and saute until slightly brown, about 4 minutes. Add garlic and cook for 1 additional minute.
  3. Add wine and Dei Fratelli Petite Diced Tomatoes and continue cooking until reduced down, about 5 minutes.
  4. Add vegetable broth and bring to a boil. Reduce heat and simmer for 7 minutes, stirring occasionally.
  5. Remove pan from heat and allow to slightly cool, about 3 minutes. Fold in sour cream, salt, and pepper until well combined. Serve over noodles and garnish with parsley.
